The empty space part might be fixed in Plasma 6.1 since I can't repro the issue
exactly like you do, but there is something I can spot
1. Open a category with item that has really long name for an app
2. Right below or above it, open a category that has no app that has such a
long name
3. The width of the long name app is used even its not needed.

I'll set this as confirmed. There is big likelihood that some values do not
reset when opening and closing the menus.
