It is confusing. Associate the identities with in and out servers and when you remove an identity it should remove everything related. The identity should open when modifying it and the tabs for in and out servers and any related things should be found in the "identities" tab. I am not sure why it is called "identities" either. Aren't these just email accounts? Would it not be better to just call it an Email Account or simply Account?
