Personally I maximize and de-maximize windows all the time but I do it via the keyboard, not the mouse. We do in fact have telemetry for screen usage and though I can't give exact numbers because the data isn't public, I can tell you that the percentage of users of multi-screen setups and large screens is indeed fairly low.
