UPDATE : I've been able to re-establish my 3rd monitor, but had to select the monitor that was constantly appearing/disappearing from the drop-down monitor selection box, then click on the Enabled checkmark, then fianlly click on Apply, all that within about 2 seconds (that took me about 15m to accomplish tho!)
