But right now (dolphin closed), gvfsd-fuse doesn't consume any cpu time, only
if the issue with dolphin inside the encfs folder occurs.

My file ~/.config/baloofilerc includes the entry

exclude folders[$e]=$HOME/.kencfs2/.encrypted/

so baloo won't try to index encrypted files. 

Besides this, any activity by baloo would be listed in TOP! If baloo were the
culprit, I'd have seen baloo file extractor and the like, but not here!
