Hi Nate and thanks for your answer.
I would gladly accept this solution, but after 30 minutes of searching the web,
I tend to think that mounting partitions using UUID or Labels is possible only
for local partitions and USB devices.
My current fstab uses UUID for every partition... except the NFS.

And when I think about it, it makes sense that it's not possible : the computer
is not aware of labels of remote devices, they have to be connected to your
computer.
Label is assigned to a partition, not to a shared folder also (I think).

If I'm wrong, feel free to correct me and to tell me how to mount NFS share
with label, I will be very happy to test it :)
