Are you sure that on https://apps.kde.org/fr/skanpage/ an old image is shown?
After your first bug report, I uploaded an updated screenshot and it shows it
for me.
"Export to PDF" allows to add OCR to the PDF, the other does not and is a
faster way to save the scan, also to an image file.
For the actual bug: confirmed, the toolbar currently does not nicely adapt to
the actual available width.
