Jupyter Notebook/Lab is a browser application (talking to a kernel). From 
what you described, it looks like something triggered some kind of 
auto-correction. From your example, clearly the "ur" in the word "Our" was 
understood as "You're" abbreviated and got auto-corrected. This is not a 
native Jupyter feature. It might be a browser plugin or some custom Jupyter 
extension. 

Are you using a Jupyter installed from an official source? If so you can 
raise an issue in the corresponding repo as suggested.
