We currently run notebooks through Firefox using jupyter notebook --browser firefox
In notebook >= 5.7 the language goes into what appears to be simplified Chinese (sorry if I'm wrong here) and can't be changed (see attached image). Downgrading to notebook 3.6.0 fixes this issue.
