I cannot reproduce that.
I created a layer,
added R_G_B attribute,
saved the file and the project,
re-opened it
The ColorTheming is not activated.
But if I choose ColorTheming tab, I can select R_G_B attribute, which is
not compatible with how R_G_B attribute works.

I fill a bug report : de-activate R_G_B attribute in ColorTheming
