In Prototype there is a method called stripTags(), it's source looks
like:

stripTags: function() {
    return this.replace(/<\/?[^>]+>/gi, '');
}

To do it the jQuery way, I might consider doing something like this...

jQuery.fn.stripTags = function() {
        return this.replaceWith( this.html().replace(/<\/?[^>]+>/gi, '') );
};
