There's no such option in "copy artifacts plugin", maybe there's a plugin 
that extends this one which I dont know about...
Unless somebody comes up with a better solution your best bet is to write a 
shell script that will download the artifacts via wget

http://jenkinsurl/job/job_name/build_number/artifact/artifact_name.ext


Don't forget that you need to configure the job with artifacts to actually 
keep 0...N number of artifacts.
