It can be accessed via:

http://jenkinsurl/job/jobname/config.xml

So perhaps at the very end of your test steps, you should wget/curl it and save it as an artifact.

What are some approaches for a slave to get a copy of a job's config.xml configuration files?

Builds created on slaves do not have a physical copy of the job's config.xml.

My management wants us to add the Jenkins job configuration config.xml files as part of the build artifacts released into our release system.
