If you leave the project items blank, then they will be blank. DEFAULT_SUBJECT is the subject content from the global config, this also goes for the other items in the project config. If you put DEFAULT_SUBJECT (or the other DEFAULT_) in the project and there is nothing in the global config, then they will be replaced with an empty string.
