Ah, so just looked and apparently when Gus introduced {{SOLR_JETTY_HOST}} in 
SOLR-13985 (9.0), he changed {{jetty.host}} to {{solr.jetty.host}} in 
{{jetty-http.xml}}. So now {{solr.jetty.host}} is the option used across all 3 
files (jetty-http.xml, jetty-https.xml, jetty-https8.xml).
