Review Comment:
   The connector never supported multi versioning, I don't see cell timestamps 
to schema mapping anywhere in the spark3 module and we followed the same design 
here. HBaseDataWriter always rely on current time for cell timestamps.
   
   We can re-word the javadoc to highlight this behaviour.
