Your syntax is incorrect. s3://<bucket>/<path> is always setting the bucket at
a given endpoint.
For minio, we explicitly set http://<ip>:<port> as an {{s3.endpoint}} and then
use s3 protocol just for actual bucket.
There is also a combined syntax (Virtual Hosted-Style Requests) where you set
it to http(s)://<bucket>.<ip>:<port>/<path> [1]
