I couldn't get the interceptor working (I tried AbstractPhaseInterceptor and 
phases from receive to pre-unmarshal and the media type was always the same). 
However, the ClientResponseFilter solved my issue, where I could just override 
the header using:
{code:java}
response.getHeaders().putSingle("Content-Type", "application/xml");
{code}
