Currently we have a dependency override within camel-fhir for
org.hl7.fhir.utilities. I think we should also add overrides for the other FHIR
core transitive dependencies so that everything is aligned properly. It also
allows the FHIR core bits to be upgraded independently of HAPI FHIR, which can
be useful for applying CVE fixes.
