Summary: Move Hive ACID stress tests to exhaustive mode only

Currently Hive ACID stress tests run with "core" exploration strategy. It was
important to get instant feedback about this feature when this was actively
developed.
Now there is no active development at this area and Hive ACID tables are being
superseded by Iceberg.
I propose to use "exhaustive" exploration strategy in test_acid_stress so we
can speedup pre-commit tests a bit.
