You should take a look at horde/config/prefs.php : from_addr preference
You can customize horde a lot by the prefs files (a file for each
application : horde, imp...).
The hooks are defined in the hooks files, for instance : in the
horde/config/hooks.php, you can define the _prefs_hook_from_addr function.
