I'm not familiar with spamassaissin particulars, but with DSPAM, I have set up a 'spam' and 'ham' email address that pipes the mail through a DSPAM retrain utility. To do that, I set up a new transport in postfix's master.cf. The utility get's the username from either the recipient or the sender headers.
http://dspamwiki.expass.de/Installation/Postfix/NealesSetupdescribes how to set that up for postfix and DSPAM, if that is of any help to yo u figuring it out for spamassasin.
