If its just the users you want to migrate and not the mail data,

then

if {you are using Exchange 2000

your user data is in Active Directory, which is nothing but LDAP server (+++). You should be able to export the Active Directory LDAP data in ldif format, and import the same in OpenLDAP setup on Linux. Though I have'nt done that personally, thats the way I can think of.}

{you are using Exchange 5.x

Exchange 5.x uses its own Directory, and you should in some way be able to export data in CSV format}
