I generally use 1600x1200 and upwards myself. The
problem is not the display. I am not sure what wraps
the lines (the server or the client) but most e-mails
will be wrapped at a certain width and if the sender's
client is set to a certain value and the receiver's
client wraps again at something less you get those
broken up lines.

Well Outlook and outlook express seem to be only 2
mailers I know of which do not have a about a 74
character wrap. So 74-76 should be very optimal, I
think the default in Outlook (*) is 80 or something.

The simplest solution to that is to tell them to
reduce so as to stop those annoying line wraps.
