Do you mean you want to use Centos on the host and any other OS as the guest

or

you just want a centos instance in a cloud?

In the first case (which implies you want the cloud to be hosted and
controlled by you), serious infrastructure (supporting KVM) and work
on KVM and other virtualization is required. The host OS should
necessarily be 64 bit.

Not to mention the HA for VM migration and that implies external storage.

You will also need to do some real work on networking (storage, HA and data).

If you want support, you may want to look at RHEV.

In second case, all you need is just to clone Centos (preferably)

In any case go with Centos 6.2
