If there were any evidence that counterfeit DKIM records were a problem,
or had even occurred anywhere, ever, I would be more concerned.

Sure, it COULD happen, but all sorts of stuff could happen.  Part of
engineering is making tradeoffs to put the effort toward the problems
that matter.
