You can change your default host check to use something other than ping
for a box by specifying the check_command line for that host.

So instead of something like:

# Generic host definition template - This is NOT a real host, just a
template!

define host{
        name generic-host ; The name of
this host template
        *check_command                   check_icmp!200,100%!500,80%*
        register                        0
        <stuff>                         <more stuff>
              }
Do something like

# host definition template that uses defaults but checks with check_ssh
instead of check_icmp

define host{
         name                            ssh-host-check
         use                             generic-host    /< Inherits
everything else from generic-host template/
         *check_command                   check_ssh*
         register                        0
             }
And then in the hosts you want to check via SSH instead of ping
  define host{
         host_name                      server1.company.com
         use                            ssh-host-check
         alias server1 - web server for stuffs
         address                        8.8.4.4
            }
