There'd be an obvious option (https://www.brown.edu/cis/tn3270/) for a tn3270 client if you could convince apple to upgrade Carbon to 64 bit. the similarity between *bsd and Linux, I would expect that some of the TN3270 clients for Linux would also work on macosx; there might even be binary distributions.
