A couple of things - do not make the interviewee embarrassed. You want to see if the relationship would work. If they are good.. you want to sell organisation to them and make them join you. "How would you go about doing (something easy) ..." three good answers are a) I don't know or b ) I'd go and ask .... c)a technical explanation. See if they mention relevant (unprompted) keywords. No one is perfect. They should feel you are helping them. Answering the first question right will give them confidence. Then ask a harder question, and keep going deeper until they struggle.
Would you want them in your team? There may be no perfect applicant. You may have to be satisfied with someone who can do 50% - and grow the rest. In one of my three interviews after I left Uni ( 45 years ago) we discussed singing Beethoven's choral symphony. The company got to know if I was a loner, or a team player. You want a bit of both.
