... should not be the default.  Code samples don't work with smart-ass
quotes and italicized pathnames.

Some processors have a magic number to disable/enable markdown.
Or an editor option.  And the behavior can depend on whether
text is entered:
o From a file
o paste from clipboard
o from keyboard.
