The XYZ mosaic mode maps your photos onto a plane, imagine this plane is a
painting hanging vertically at front in the middle of the scene.
This arrangement is ideal for stitching images of murals etc... because these
are normally on vertical surfaces.
You stitched the floor of your scene by pretending that it was a wall in front
of you.
The 'plane yaw' and 'plane pitch' parameters allow you to rotate this plane
around, to the left and right and up or down - this is a whole new level of
complexity that you probably don't need until you have everything else working.
