Check out the AbstractEntityPersister constructor and it's use of
PersistentClass
persistentClass.getIdentifier().getColumnIterator();
And for regular properties
persistentClass.getPropertyClosureIterator();
property.getColumnIterator();
SingleTableEntityPersister has specific code wrt discriminator column
