I suppose I'm not being very helpful but I wish there had been a course for me to go on!
Desperate need + the manual are quite a good course. I think one problem is that there are a lot of ways to achieve things and you'll get different ways to use make from people with quite different problems. So you might get 3 "experts" in a room and they would disagree about the best way to create some build system.
