We use the Shepherd, which is much better for Guix. Someone with more Guix experience needs to jump in here. As a second step, you also need to make sure that you have the "locales" installed. That's the Linux term for a neat bunch of data that describes the local customs including language, timezone and currency. For you, that would presumably be German, English, Greek and Hebrew.
