I wonder why you don't see the GRUB menu when booting the USB normally. Do you get a five second blank screen before the kernel loads? Worst case scenario, you can install Guix (not necessarily GuixSD) on some other system and generate a new USB image that adds 'nomodeset': $ wget https://git.savannah.gnu.org/cgit/guix.git/plain/gnu/system/install.scm ...make some changes... $ guix system disk-image install.scm ...then dd the resulting store item onto a USB drive as usual.
