I'm not sure there will be packages in Guix requiring older versions and
it would require a lot more testing of course. Arch Linux for example
also only packages the latest version.

I think that is fine for CI, but for local builds using only one
architecture would be preferable (or necessary because of limited
memory) and for the dependencies, it would be convenient to have
substitutes also for single-architecture builds.

In any case, there are 8 officially supported architectures listed here
[1], so maybe that would be a reasonable start?
