Adding i915 to modprobe.blacklist (amdgpu and radeon were already there) solved the problem.

Also I found that trying ctrl-alt-F3 and than ctrl-alt-F1 resulted in a readable menu. But without the modprobe.blacklist the other TTYs remained unreadable.

When you press the E key in the GRUB boot menu, you could try appending
to the linux line either

nomodeset

or

modprobe.blacklist=i915

But this would be an issue for the installed system as well, on the
virtual terminal at least.

Or maybe rather try a newer Guix System image with a newer kernel?
