You may find Scratchbox useful for compiling stuff - for example GTK -
for your embedded device. You can find more info from
http://www.scratchbox.org/

And about learning GTK application development, I suggest you to see the
fine tutorials at http://developer.gnome.org/doc/tutorials/#gtk
