Any use of the option --grab overrides an used option -- no-grab. The default is --no-grab. So, adding "no-grab" to ~/.gnupg/gpg-agent.conf should do what you want. Granted. Unless you know that pinentry is always invoked and controlled by gpg-agent it's not obvious that you have to look at the manual page of gpg- agent to look for options to configure pinentry. Hmm, the default should be "no-grab" according to the man page. According to the history "no-grab" is default since gnupg 2.1.23 (released almost 8 years ago).
