-r, --recipient
-u, --local-user-name (may be omitted if default-key specified in gpg.conf)
-s, --sign
-e, --encrypt
-a, --armor
.asc implies armored output. That option was the important missing piece.
The .gpg extension is usually used for binary OpenPGP files.
