absolute minor quirk, don't know who is in charge of such,
 
the maual at <https://help.gnome.org/users/gnumeric/stable/keybinding.html.en>
 
lists ctrl-$ twice:

• Ctrl-$ Formats the current selection with the default currency
• ... 
• Ctrl-$ Formats the current selection as the default currency
