> Why is Open Document Format not the default file format in Gnumeric?

ODF was made by people with little knowledge of spreadsheets, and it shows.

We could make it the default file format, but...

1. Some things in a Gnumeric file cannot be saved to ODS.

2. Interoperability would not really improve. Even when another
program can read
an ODS file it didn't create, the calculated results in the file
generally will not agree.
Semantics was left unspecified in the ODF spec.

3. There are performance issues with ODS because no-one thought of
shared expressions.
