Jerry There are a variety of ways of installing packages on Linux Mint. The most common and useful is using apt at the command line. Also the commands dpkg and gdebi can be also used for Debian packages. Dpkg is normally installed in Linux Mint but gdebi is optional but can be installed with apt.
There is an unofficial ppa which maintains an upto date version of gnucash which you can add with sudo add-apt-repository ppa:gnucash/ppa sudo apt update sudo apt install gnucash in a terminal. (see https://ubuntuhandbook.org/index.php/2025/03/new-gnucash-ppa/)) That will give you an up to date non flatpak version if you want it. The maintainer of this has recently joined the packagers team for Linux Mint so it will likely be an official LM endorsed package fairly soon if not already.
