Dark mode works fine with GC5.10 on Linux Mint 22.1 as long as you turn the Register preference for the GnuCash colours off in the preference dialogue. What exactly. I don't recall any problems with dark themes when I was using GC5.1 so it may be something unique to Ubuntu 24.04
