I've got versions of gnucash in my downloads folder going back years :-) It's up to you if you have the available storage but if you don't want to keep old versions around you can always go to the gnucash home page and download a previous version from https://sourceforge.net/projects/gnucash/files/gnucash%20%28stable%29/ - it has versions going back to 2007 but I wouldn't recommend them !!!
If you want to know if there are issues with a new version, monitor this list for a couple of weeks after a release and see if there are any issues and then upgrade. Cheers David H.
