Save yourself the trouble of diving in to the rabbit hole and notice that the stack trace features WritingToolsUILibraryCore in Frame 11. It looks like it’s trying to insert Writing Tools stuff into a menu. The actual crash seems to be in libgc, a dependency of Guile.
Homebrew just wraps our dmg. You can prove this to yourself by running codesign on Gnucash.app to see who signed it.
