Do you not find it on File » Properties » Business? If that's not what you're looking for, where exactly is this "company name" that you want to change? (Edit » Preferences or File » Properties will almost always contain the answers to questions of this sort. Until you get more acquainted with GC, it's always a good idea to look through all those settings. Do you mean just additional GnuCash books? If so, you can simply delete the *.gnucash and *.log files for those companies.
