From the advice below, the obvious solution seems to be to combine the two payments in the GC current account into one payment with an extra split.

You can turn off the payment transactions that GnuCash generates and just create your own, if you wish, since you'll need them split anyway.

In the English menus it is:
Edit > Preferences > left-side choose Register > uncheck "Automatic credit card payment"

(Separately, for anyone who is wondering about the interest earned/owed entry feature on their bank accounts and credit cards, that gets turned on/off in Edit Account window for each individual bank account "Auto interest transfer".)
