My experience is similar. I have OS linux mint 21.1 and have been using flatpaks for a few years. Currently 5.6-2. The log, backups and *.LCK land in the same directory where the current gnucash data is, ~/Documents/gnucash. I created this directory in January of 2023 when I changed computers so this was only used with flatpaks.
