For what it is worth, I don't see any delay at all. I have been using Gnucash for years and the data file is over a megabyte in size although that probably would only affect saving anyway. I have more than enough memory that entering transactions would not involve disk access. Even saving the file is much quicker than what you describe.
I am running Gnucash 5.6.1 on MacOS 14.4.1 on an M1 Mac with 64 GB of RAM and ample SSD disk space. Helpful responses are more likely if one includes more information about the environment surrounding the problem. What hardware and operating system are you using?
